I've got a flight to SEA. But gonna have a layover in Melbourne from 11am-3pm Saturday.

Never been to Australia.

You are not going to be in Australia as such. You will be an international transfer so remaining airside throughout.

As Muchado said you are likely stuck in a transfer lounge.
If not and your flight arrives at 11, it's going to take half an hour to get through customs and get your bag.
Then it will need to check in, pass security, customs etc for your 3pm flight.
Not much time for anything.
Many years ago I had a few hours waiting after a inter state flight before coming back to NZ. I had an escort I already knew met me at the airport.
She was to drive me to her place, but that wasn't possible that day.
She booked us into the semi attached hotel for half day. Seemed common for long connection waits. (Probably don't do that anymore)

No point in punting in Australia as its more expensive than here.

You will easily get your fill in SEA and get a female companion
