I don't know about Stella House specifically but in general the extra you get for VIP will always be dependant on the particular SWer, some offer it to just squeeze extra hard earnt money out of you and give you little extra in return and others can give you more and some can give you a really great time, rule of thumb is to try them at a shorter basic service first to feel them out before deciding whether they are worth handing over the contents of your wallet to for a VIP booking

If budget is an issue (which is usually is of course...) then doing a standard booking and then assessing whether it would be worth spending more next time (if there is going to be a next time) would be sensible.
