Some random thoughts

Most importantly you need alot of money , if a problem return to NZ and do not Pass Go.

Websites that are legit Scarlett Blue (Biggest site) , Ivy Societe , Realbabes , Dakota Dice . NZG Aus site out of date don't bother they can't compete. For non Aussies escorts SB best , for Aussie chicks the rest are the best. Aussie SWs hate the personal data have to provide to SB and higher costs , foreigners don't care prefer the larger target audience

Compared to NZ on average
Pro's - Service level higher , Hotter workers (can find genuine models) , owo common with escorts (not in brothels except WA) , Native Aussies honest what services they provide who don't take any bullshit

The market is massive and varied, some key differences.

Quality varies on what State your in depending on the legal environment and Pop size. From experience Sydney is the best , Adelaide the worst has the most restrictive laws with local SWs on edge . If punting here use out of state chilled touring SWers .

Also Locanto is useful for the massage scene with many shops advertising through that medium and not being coy about the extras available.
