Paying deposits is quite rare. Personally I am comfortable paying a deposit if the girl is well reviewed and has a good reputation or if it is a good establishment e.g the apartment when they have touring ladies.

In theory deposits should work well for me as I use to book well in advance. Couple of times due to life shit had to bail.
Shit happens both ways just don’t be dumb like me one I paid more than I was willing to lose. Over the years I’m down 2 deposits my fault an 3 the SWer cancel.
Doesn’t matter if they are well known or not in my experience.
